Break bread with the folks of Hidden Apron, the SALO Series, Sariwa Kitchen, and Alchemy Kitchen as they share dishes that explore themes of constancy and timelessness in the face of constant change. Tucked away in the intimate and newly opened Copyright Bar (part of Trademark & Copyright), guests will be treated to several courses of Filipino-inspired cuisine featuring each cook's own interpretations and seasonal produce.
Each cook collaborating on the menu has a unique background and will share their current work and passion project through each course. Come join us over good food, drink, and conversations.

HIDDEN APRON (Paolo EspaƱola) - We believe people should cook more and that spending a few leisurely hours on a weekend preparing a meal rather than finding out a 5-minute microwaveable shortcut is far more fulfilling an experience. We, like you, are primarily a group of home cooks and day-jobbers. We're just regular people trying to cook more, eat better, and live well. We believe that more than just a simple recipe and a well-lit photograph, we need to celebrate our own personal stories around our food: how and why we eat the way we do. By revisiting the rich food culture we share - through our dinners, podcast, and writing - we hope to inspire you not only to cook a little more and a little better, but hopefully, to see food as a vital enjoyment that not only keeps us alive, but lets us live. SARIWA KITCHEN (Aileen Suzara) - Sariwa means "Fresh" in Tagalog. Our flavors come from the land of salt and coconut. Our menus reflect a deep love for the land and our agricultural roots. SALO SERIES (Yana Gilbuena) - SALO is a moveable Filipino pop-up dinner series. Salo, derived from "Salu-salo" which means a gathering, is designed to gather the curious ones, adventuring for deeper understanding of native feasts. Sourcing locally and seasonally in each city where the dinners will be held, SALO aims to cultivate cultural awareness and create communities through food. IG: @saloseries
ALCHEMY KITCHEN (Ronnie Taylor) - Chef Taylor has worked in some of the most prestigious restaurants in San Francisco. After an externship at TAJ Campton Place followed by enrollment at The Art Institute SF to pursue Culinary Arts, he decided to dedicate his craft for his love of Japanese cuisine and culture. He started with robata grill at Ozumo SF, became chef / kitchen manager at Chotto Izakaya, and then became Sous Chef at Ken Tominaga and Michael Mina's Pabu and The Ramen Bar.
