A message from Head Chef Grant Lee Crilly:
Knife sharpening is one of the most popular classes on ChefSteps. Sharp knives are a necessity in every kitchen, for every cuisine, and we've heard from many ChefSteps community members that they'd like more practice and tips regarding their knife sharpening skills, so we're setting up a workshop for folks like you to come and get feedback from me on your technique, as well as see a hands-on demo. Whether you've learned from our class (https://chefsteps.com/classes/knife-sharpening) or on your own, practice and feedback is what takes your technique from good to great.
I've been sharpening my own knives since I was a youth. My dad taught me when I was a kid to sharpen our own filet knives, fishing hooks, and even scissors. Over the years I moved away from oil stones to water stones as I began to be influenced by some Japanese cooks that I worked with in Europe.
To get the most out of this, you should bring your favorite knife and your own set of stones. I will show you a few ways to fix broken and chipped knives as well as how to properly hone with a steel.
Who's this for? Anyone who wants to be able to sharpen all their own knives as well as their friends knives. Believe me, I paid for a lot of dinners as a youth by sharpening other chef's knives at $5 each.
Where? This is limited to 20 folks and will be held in the ChefSteps space down in Pike Place Market.
What should I bring? Your favorite knife, as well as a chipped or damaged knife (to repair) and your sharpening stones.
