You already know typical varieties like gordal and cuquillo, but what about the lesser known cornicabra the goats horn, the aloreña (the only D.O. olive in Spain) and the commercially extinct, zorzaleña which are seldom seen in Spain, let alone the U.S.? Learn why some olives are green or brown while others are purple or black. Find out what a traditional curing method means compared to a natural cure. As always, well break out the cheese in search of finding the perfect pairing for each olive varietal. |
